The wok kitchen is an ultra fast kitchen since the cooking is done at very high temperature. In a wok pan, the edges are high and the cooking zone is reduced to concentrate the heat.
The choice of meat:
Choose a piece, without too much fat: round of lodging, lodging with the nut, tendon of slice, twin with steak for the ox or the horse, walnuts, sub-nut or filet for the veal and saddle of leg of lamb or filet for l ‘lamb.
The cut :
Meat cut into strips should be used. Cut the meat into thin slices 2 cm to 5 cm long and about 5 mm wide. For this, it is advisable to use a knife with a long blade and cut parallel to the fibers of the meat.
