Place the prime rib on an oven rack and place on the dripping pan. Do not season or add fat. Let one face “crust” before returning the coast to “crust” the other side.
Take the beef rib from the oven and set aside.
Prepare a soft dough: knead the flour with the salt and pour water little by little. Spread it to cover the meat without leaving a vacuum. Using a brush, brush the edges of the dough with a little water and solder them.
Place the prepared rib on a baking sheet lightly oiled. Cook for 15 minutes per pound in a hot oven (th 6/7, 180/200 °).
Break the crust and serve.
Serve with baked potatoes and topped with fresh herbs cream.
