Beef patties with sauce


1 kg. meat (500 gr. ribs, 500 gr. neck) – ask the butcher to grind twice
2 large red onions
2 large white onions
2 large Isadora potatoes
1 bunch of basil
1 bunch of cilantro
3 cups soda water
5 garlic cloves
4 large bell peppers
5 cherry tomatoes
100 gr. white sugar
30 gr. cumin
30 gr. ground black pepper
70 gr. salt
100 gr. sweet paprika
4 tablespoons tomato sauce
1/2 liter boiling water


Preparation of patties:
Grate 2 red onions and drain of liquid.
Peel 2 potatoes, grate and drain of liquid.
Thinly chop a bunch of cilantro.
Add 3 cups baking soda.

Mix until uniform.
Form into balls, oil disposable baking pan, arrange the patties and chill in fridge.
After 4 hours, place patties in 180°C preheated oven for 10 minutes and remove to pot.

Preparation of sauce:
Chop onions, bell peppers, tomatoes and garlic, and fry until brown.
Add spices.
Mix over low flame.
Add tomato sauce until it starts to stick to bottom of pot.
Add 1/2 liter of boiling water and bring to boil.
Add basil leaves, and mix with immersion blender until the sauce is velvety smooth.
Add patties to sauce, arranging in the form of a rose.
Simmer another 15 minutes on a low flame.
