Beef tajine with dates and pumpkin

1 kg beef to simmer (Chuck, collier…)
4 peeled pumpkin slices, cut into 2cm
4 chopped onions
4 chopped garlic cloves
½ bunch of coriander
4 peeled tomatoes
8 dates
250 ml chicken broth
2 tbsp. paprika
1 tbsp. cinnamon powder
½ tbsp. Ginger powder
½ tbsp. Cayenne pepper
1 tbsp. Olive oil
Salt and freshly ground pepper


STEP 1 :

  • Cut the beef into cubes.
  • In a salad bowl, mix the spices, salt and pepper, add the meat cubes and coat them well with the spices.
  • In a sauce pan, scald the tomatoes and remove the skin. Cut them roughly.

STEP 2 :

  • Heat a pan with olive oil, add the meat and onions over high heat for 8 min until they color, add the garlic and continue cooking for 1 min, add the broth and the tomatoes and bring to a boil. Cover and cook for 1h30min over low heat.
  • Add the pumpkin cubes, cook for another 20 min. 5 min before the end, add the dates. Once off the heat, sprinkle chopped coriander on top.
  • Serve hot.
