Rib and Root Vegetable Stew

3 carrots
2 potatoes
2 red onions
1 leak
1 sweet potato
1 can of green peas
3 tablespoons tomato paste
1 cup red wine
2 tablespoons sweet red paprika
1/2 tablespoon cumin
1/4 tablespoon ground black pepper
1 cup brown sugar
3 kg fresh French ribs


Place the meat in a deep pot with 1 carrot, 1 red onion, half a leek. Cover with water and cook for about 3 hours, remove to cool and cut into cubes in a separate pot. Chop the carrots, potatoes, onions, leeks and sweet potatoes into 2×2 cubes and fry until golden brown.
Once golden, add the tomato paste and spices until they stick to the bottom of the pot, and then add about 3 cups of broth from the meat pot and cook on low heat for about half an hour. After half an hour, add the meat cubes and cook for another half hour on low heat.
