Put the prunes to soak in a little hot water.
Lightly flour the slices of meat, brown them in a casserole dish in hot oil and margarine. Add the smoked beef breast cut into lardons, minced onions and 2 glasses of water. Season with salt and pepper, cover and simmer for 2 hours over low heat (50 min in a pressure cooker).
20 min before the end of cooking, add the drained and pitted prunes and the almonds.
Serve the shank slices topped with prune sauce.
Serve with couscous seeds with margarine.
